「香港之光」Stef Yim 焱史特，香港出世，美國洛杉磯長大，曾於美國Napa 與法國Burgundy師習釀酒技術且他熱愛世界高海拔葡萄酒，對其如數家珍。2014年，Stef Yim在意大利西西里島Etna火山釀造的精品Azienda Agricola Sciara, 因為這裡有老樹，又有海拔一千公尺以上的葡萄園，屬高山氣候，日夜溫差大，葡萄成熟得很典雅，所有酒款年產僅有一萬支左右。Sciara 的酒，大多用海拔來作酒標，例如 760 metri、980 metri、1200 metri 等等。以反映不同海拔葡萄的風格。Centenario沒有標海拔，但是是很老的葡萄！
