Sciara 760 Etna Rosso 2020 by Stef Yim

The Sciara 760 meters (previously known as 750 meters) will be blended together with grapes harvested from another vineyard located from 730 m to 770 m known as "Contrada Taccione. Due to the similarity to the soil and altitude, I decided to combine them together to make the 760 meters. The works in the vineyards are all done by hand in the most natural way possible without irrigation, chemical treatments etc. Due to the limited cultivatable area of Mount Etna the production is very limited but qualitative."

Tasting Notes:

With aromas of crushed stones and dried berries at the beginning. The wine slowly evolves into hints of roasted cherries and chestnuts. The wine is well-balanced and rich in subsistence. The seductive flavors of wildberries & cherris, flinty minerals that echo the red fruits in a lingering finish.

"Recommended pairings: Grilled meat, Ossobuco, Roasted pigeon etc."

Contrada: Sciaranuova and Taccione

Altitude: 720 to 770 meters above sea level. Vineyard age: 15 - 75 years

Training system: Alberello and Cordone.

Variety: Grape variety: 90% Nerello Mascalese ; 10%Nerello Cappuccio

Soil: Heavy volcanic rocks and mixture of sands

Harvesting period:

9 and 10 October harvested by hands in cassettes from 5am. Manually assorted afterwards.

Fermentation: Spontaneous with indigenous yeasts for 22 days. No clarification nor stabilization.

Aging: 19 months in oak barrels of various passages.

Filtration : 5 microns

Production: 4170 bottles

「香港之光」Stef Yim 焱史特，香港出世，美國洛杉磯長大，曾於美國Napa 與法國Burgundy師習釀酒技術且他熱愛世界高海拔葡萄酒，對其如數家珍。2014年，Stef Yim在意大利西西里島Etna火山釀造的精品Azienda Agricola Sciara, 因為這裡有老樹，又有海拔一千公尺以上的葡萄園，屬高山氣候，日夜溫差大，葡萄成熟得很典雅，所有酒款年產僅有一萬支左右。Sciara 的酒，大多用海拔來作酒標，例如 760 metri、980 metri、1200 metri 等等。以反映不同海拔葡萄的風格。Centenario沒有標海拔，但是是很老的葡萄！
