Maison Gautheron d'Anost, Meursault Les Liens d'Or 2020

Winemaking:

Direct pressed in stainless steel. The juices are cooled only once prior fermentation, then letting the temperature increase naturally in order to start the fermentation gently. Aged in different sized barrels for 12 months.

Tasting Note:

The fruit comes from two plots: Grands Charrons and En l’Ormeau. The former brings structure and mineral complexity, with just the right amount of attractive reduction, whilst the latter on the other hand contributes with roundness and power typical of Meursault.

莊主Bastien Gautheron在2020年開啟他創立的Maison Gautheron d’Anost的第一個年份，由位於Meursault的Pierre-Henri Rougeot提供空間給這家極新銳的微型酒商。在擁有自己的酒莊之前，Bastien已在葡萄酒業奮鬥將近20年，在2014-2019年間，他曾擔任布根地白酒名家Oliver Leflaive的行銷總監，現在除了經營Maison Gautheron d’Anost之外，也同時在Pommard自然名家Comte Armand釀酒，種種資歷已讓這顆尚未被發掘的寶玉漸發光彩，Maison Gautheron d’Anost無疑是布根地冉冉升起的未來。

Bastien堅持他的酒必須有機、極低人工干預。Savigny-Les-Beaune的Les Goudelettes與50%的Haut Cote de Beaune白葡萄園是他目前僅有的自有園，其他酒款使用的葡萄則來自Bastien長期信任的葡萄農朋友，也同樣是有機栽種。

在葡萄收成與壓榨之後，先降低葡萄汁溫度，再由發酵過程使整體溫度自然上升，使用150公升小型不鏽鋼槽發酵，避免過多的萃取，Bastien喜歡使用低溫的短浸皮萃取優雅的質地與風味，在發酵前僅進行兩次的壓帽與淋汁。白葡萄酒於350公升的橡木桶中陳年以減少桶給葡萄酒的風味影響；紅葡萄酒則以不到30%的輕度烤製小型橡木桶陳年，一切釀酒選擇都傾向尊重葡萄酒最真實自然的風味，以輕微的雕琢詮釋布根地現代風格的豐沛果味與躍動活力，啜飲之下，是風土帶來的純粹歡愉。

保護自然的有機理念不只完整落實在葡萄園與酒上，來自瑞士製瓶廠的深色酒瓶使用95%的回收玻璃，酒標100%使用再生紙並保證能夠在酒櫃儲放下而不脆化分解，連酒塞都是100%有機認證，由葡萄牙酒塞製造商嚴格揀選並整批檢驗TCA酒塞感染。Bastien對葡萄酒的理想從一而終，表裡如一，勢必朝著充滿光彩的前景邁進。
