Sciara 1200 Etna Rosso 2020 by Stef Yim

The wine is obtained from the highest commercial vineyard in Italy located on Mount Etna. The temperature could fluctuate from 6 to 15 degrees Celsius degrees between day and night. As the vines respond to the stress there will be more complex elements to develop in the grapes. This wine truly demonstrates the characteristics of Etna's environment & its soil. Its Weight is NOT the body in your mouthfeel but the PURITY of Nuances that unfold in your Palate & Olfactory. The expressive terroir in this wine may not be suitable for faint-hearted consumers ...

Contrada / Cru: Nave

Altitude: About 1200 meters

Age of the vines: About 70 to 120+ years

Training system: Alberello (Single Goblet)

Soil: Volcanic ash and sands

Harvest dates: 20 October by hand in baskets from 5am. Manually assorted afterwards.

Fermentation& Maceration : Spontaneous with indigenous yeasts whole cluster for 25 days. No clarification or stabilization

Aging: 19 months in various Terracotta jars and glass containers

Production: 1053 bottles

Filtration : No

Tasting Notes: 
Surreal aromas that reminiscent of Rose petals, vetiver grass and humid stone odor in a rain forest. The transparent texture of the month seems to elaborate the flavors of mountain berries. The wine has the purity that sincerely expresses the soil. Recommended pairings: White truffle, roasted chestnuts, ginger chicken and most of the Kaiseki dishes etc.

「香港之光」Stef Yim 焱史特，香港出世，美國洛杉磯長大，曾於美國Napa 與法國Burgundy師習釀酒技術且他熱愛世界高海拔葡萄酒，對其如數家珍。2014年，Stef Yim在意大利西西里島Etna火山釀造的精品Azienda Agricola Sciara,  因為這裡有老樹，又有海拔一千公尺以上的葡萄園，屬高山氣候，日夜溫差大，葡萄成熟得很典雅，所有酒款年產僅有一萬支左右。Sciara 的酒，大多用海拔來作酒標，例如 760 metri、980 metri、1200 metri 等等。以反映不同海拔葡萄的風格。Centenario沒有標海拔，但是是很老的葡萄！
