“Notes of crisp green orchard fruit, oatmeal, clear honey, white flowers and mint introduce the 2019 Viré-Clessé Quintaine, a medium to full-bodied, layered and concentrated wine that's deep and sapid, framed by lively acids and chalky structuring dry extract. If the 2018 is open and demonstrative, the 2019 is built to age and will really reward some patience. 93+, drink 2025-2040.”

“A small and concentrated crop after frost damage. Clean fresh pale colour, the bouquet is almost cool, with very white fruit, becoming more and more beautifully perfumed as it opens out, ripe apples with a tiny suggestion of peach at the sides, and excellent acidity. This should be a long lasting and relatively lush example. Tasted: October 2021. 5 stars.

Chardonnay葡萄並不特別適合釀製成晚摘型的甜酒或貴腐甜酒。布根地Macon區的Viré-Clessé是少數出產Chardonnay 甜酒的地方。不過，這裡的甜酒仍相當少見，但有不帶甜味，卻充熟果香與肥美口感的白酒，今日介紹呢支就是不甜白酒。Viré-Clessé位在蘇茵河平原邊的第一道面東山坡，離河岸只有3公里。溫暖的氣候讓Chardonnay相當容易成熟，常能有非常多的糖份，釀成的白酒有非常圓潤可口的圓熟口感，香味更有濃郁的甜熟果香。

在Clessé村北邊稱為Quintaine的區域特別適合釀造過熟的濃厚型Chardonnay白酒，糖份較高，有時甚至會長一些貴腐黴，讓葡萄產生濃郁的香氣。Thévenet家族的Bongran酒莊是布根地高成熟度Chardonnay白酒的專家，而今日介紹呢支Guillemot-Michel 就是Thévenet的鄰居，採用大致相同的釀酒方法，在Quintaine村的特殊環境以低產量與有機的方式種植，透過晚採收而釀成獨特的甜熟風格，以圓潤的口感與豐盛的糖漬水果與蜂蜜香氣為招牌。雖然酸味似乎不多，但卻也頗能耐久，常能熟成出糖漬水果，菌菇及白松露般的香氣，是布根地最獨特的酒種之一。
