About this 1er Cru
Fonteny is 3.73 ha vineyard at the northern end of Gevrey’s grands crus, just after Ruchottes-Chambertin. It sits at 285 to 300 meters' altitude, has a gentle to moderate gradient, and faces east. Jasper Morris believes is “one of the most interesting premiers crus” in Gevrey-Chambertin, partly because of the talent of some of its owners: Bruno Clair, Joseph Roty, and Christian Serafin.

"This is aromatically quite similar to the Corbeaux if perhaps just slightly more elegant. The mouthfeel of the middle weight flavors is both sleeker and more energetic while exuding a subtle salinity on the sneaky long finish that also displays touches of bitter pit fruit character and warmth on the almost painfully intense finale. This is also very powerful, indeed it's unusually powerful for Fonteny and the chewy tannins make clear that it is going to need at least a decade to become sufficiently civilized to enjoy."
Domaine Serafin 由現任莊主 Christian Serafin 的父親創立於 1947 年。第二代主人 Christian 從 1960 年代初期開始參與酒莊的工作,與父親共同經營酒莊。Christian 面對葡萄園或是酒窖的工作都是一個完美主義者,讓 Robert Parker 給予酒莊五顆星的極高評價。
Serafin盡可能地以有機方式去耕種管理葡萄,僅採用老藤葡萄釀製。預期產量豐盛的年份,酒莊會先進行「綠色採收」,控制產量,以確保葡萄品質。莊主不喜歡使用人工酵母,發酵時,他會將發酵溫度升高到 35˚C,進行一段長時間的乳酸發酵。在一位美國進口商的建議下,原本排斥使用新橡木桶的 Serafin 在 1987 年首次嘗試使用新橡木桶,發現新桶的確對釀酒工作有所助益,如新橡木的味道讓酸味較為和緩。一般來說,Gevrey 村莊級的酒使用50%的新橡木桶,老藤 (Vieilles Vignes)、一級葡萄園和 Charmes-Chambertin 特級葡萄園則用全新橡木桶。Serafin 的酒則完全不經過過濾澄清。
Serafin釀製的酒有其優雅的獨特風格。基本款的Gevrey村莊酒反映出Gevrey的細緻優雅,老藤釀的Gevrey酒質濃郁厚實,表現出良好的深度和複雜性,在好年份的時比起一級葡萄園酒款也毫不遜色。
