aged during the difficult period of the Pandemic as many lives have lost ...

Even the stone-hearted moon finds tears to shed.

Contrada / Cru: Carrana, Taccione, Monte Dolce

Altitude: from 720 to 1000 meters above sea level

Grapes: 60% Carricante & 40% mix of Catarrato, Minella bianco and Garganega

Training system: Alberello & Cordone

Soil: rocks and volcanic sands

Harvest dates: 22 - 28 September by hand

Fermentation: Spontaneous with indigenous yeasts in whole cluster

Maceration: about 40 days

No clarification nor Cold Stabilization

Elévage 18 months in Anfora, Ceramic, Barrique etc.

Production: 933 bottles

Tasting Notes:

Rosemary, wild fennel & Spearmints on the nose with honey & mandarins unfold slowly on the palate. This white wine gains momentum of richness after 20 minutes of breathing time.

Recommended 16 to 18 degrees Celsius serving temperature... and the long finish has a fresh sensation of exotic tropical fruits. Recommended pairings: Chicken with orange, Pasta with seafood, Braised chicken with chestnuts, Orange Soufflé etc.

「香港之光」Stef Yim 焱史特，香港出世，美國洛杉磯長大，曾於美國Napa 與法國Burgundy師習釀酒技術且他熱愛世界高海拔葡萄酒，對其如數家珍。2014年，Stef Yim在意大利西西里島Etna火山釀造的精品Azienda Agricola Sciara, 因為這裡有老樹，又有海拔一千公尺以上的葡萄園，屬高山氣候，日夜溫差大，葡萄成熟得很典雅，所有酒款年產僅有一萬支左右。Sciara 的酒，大多用海拔來作酒標，例如 760 metri、980 metri、1200 metri 等等。以反映不同海拔葡萄的風格。Centenario沒有標海拔，但是是很老的葡萄！
