There is fine density to the middle weight flavors that possess a really lovely texture while delivering excellent length on the balanced finale. "From vines planted in 1922 just under Château de Pommard and another parcel in Volnay planted in 1924, the 2019 Bourgogne 'Héritier' is matured in 10% new oak. It has a lovely dark plum and mulberry bouquet that is very pure and flattering. The palate is fleshy and ripe, offering a sweet core of red fruit and a plush finish. Quite Volnay-like."

"This cuvée is made from Nicolas Rossignol’s oldest vines, planted in 1922 below Pommard, and now with an old vine below Volnay. 30% whole bunch, 15% new wood. The colour is purple to purple black, with very rich fruit – in fact it needs a sulphur correction as it has become a bit raisiny. Powerful and persistent nonetheless."
品嘗Nicolas Rossignol釀造的葡萄酒,令人驚訝的這間酒莊成立於1997年,至今僅20年。卻已經獲得國際酒評家Robert Parker與媒體雜誌,包括Wine Spectator及Burghound 等的高評價認可。
這位家族第五代的釀酒師,在完成釀酒學業後,前往法國與世界各地學習,包括Volnay的Joseph Voillot,伯恩市的Louis Latour,隆河區的老電報Vieux Telegraphe酒莊,南非的Boschendal Stellenbosch酒莊,波爾多拉菲旗下的Chateau Cardonne,同時身兼家族酒莊Rossignol-Jeanniard 的釀造工作。這樣豐富的經歷幫助Nicolas在想法上得以跳脫框架,展現他獨特的釀酒才華。
1997年他購得約2公頃,位於Volnay,Pommard,Beaune,Aloxe-Corton,與Pernand-Vergelesses的葡萄園,後續陸續增加。連同父親所有約3公頃,目前共計近5公頃都由他種植管理。2000年後連同父親的酒莊也都以Nicolas之名出售。
Nicolas選擇生物動力法種植,避免使用化學藥劑,改以犁田進行除草工作,並以人工手採收,再經過嚴格的二次篩選,以確保葡萄的高品質。釀造時部分除梗,先進行1~2週的低溫浸泡,再換桶導入小橡木桶,透過原生酵母進行發酵,時間長達一個月,新桶比例約為40%~50%。裝瓶前不澄清也不過濾。保持葡萄本身鮮活的生命力與明亮的酸度。
身為Volnay的新銳酒莊明星,許多法國媒體雜誌都對他寄予厚望。2009 Decanter雜誌更給予五星級最高評價,與Armand Rousseau,Vogue等頂尖酒莊相同。更有雜誌將他與Domaine Marquis d’Angerville相提並論。
Nicolas Rossignol最為人稱道的就是純淨又富有力道的果實風味,並帶有優雅的氣質,自然帶出風土的印象,香氣飽滿並具有多種的辛香料與西洋香草的複雜層次。
