‘It has the most delicious nose – lemon curd and liquorice cream. And that's what it tastes like: lemon curd folded through with fennel seeds and a cool minty-earth whisper of liquorice and parsley root. The fruit must have been beautifully ripe because the sweetness clearly doesn't come from the low dosage, but that sweetness is beautifully balanced by the gentle nibble and nip of grapefruit pith and peel oils and the faintest feather of herbs. The bubbles feel as if they're made of satin, lacing through the fruit with languid lustre, and foaming into the finish like the soft hiss of a wave on a wide sandy beach. *It's a champagne you'd want to drink when you need a pick-me-up*: it curves around you gently, tenderly, and you can almost feel it suffusing you with lightness.’ Drink 2024-2028.
