"The NV Extra Brut Blanc de Noirs is a pure Pinot Noir largely fermented in oak with most of the wines having avoided malolactic fermentation. Creaminess and creamy oatmeal surround slight hints of plum on the nose. The rich and concentrated palate, with salty soy edges and caramelized apple, makes for intense savoriness. With Pinot-structure and undoubted power, this is nonetheless elegant and poised with bright, fine acidity. Flavors echo long and freshness simply lasts on this clear-cut, bold yet elegant wine."

Rather like the stereotypical Bollinger with lots to chew on – meaty, stereotypically 'masculine'. Very complete and not remotely austere. Dense but also manages to be vibrant and refreshing. Cries out for something to nibble on at the same time, as recommended by the late Edmund Penning-Rowsell.

An attractive quite evolved nose of truffle, figs and a hint of white chocolate, while the palate is super-exuberant with its savoury Pinot charm wreathed in finely-poised acidity; confident stuff!

Eric Rodez 不只是釀酒師，同時也是法國香檳區 Ambonnay 的重要代表人物。Rodez 家族在蘭斯山 (Montagne de Reims) 擁有 16 公頃的葡萄園，種植Pinot Noir (55%) 和Chardonnay (45%)，在香檳地區種植和釀造香檳的歷史可追溯到1757年，至今已傳承到第九代，一直都是使用最傳統的耕作方式，是香檳區稀有珍貴的特級園(Grand Cru)生物動力法認證( Biodynamic Agriculture Certification )的獨立酒農香檳酒莊。

1984年，Eric Rodez 回到家族繼承家業，在那之前他已經是知名的Krug 香檳首席釀酒師。與Henry Krug 共事時, 他學到了香檳「精細調配」的技藝；在Alsace風土專家 Marcel Deiss 身上，他體悟到了回歸自然「表達土壤特徵」的重要性。經驗與才華加上充滿藝術的浪漫氣質，香檳釀酒大師Eric Rodez 透過酒液，傳遞其對風土（terroir) 的了解與尊重，以及對香檳釀製的滿滿熱情。
