Billecart-Salmon Cuvée Nicolas François 2006 香檳光澤亮麗,呈晶瑩閃亮的金黃色,擁有細緻豐沛且隱密持久的氣 泡。撲鼻的香氣是細膩的蜂蜜、鋒蠟和香料蜂蜜蛋糕,伴隨著淡淡的奶油、烘焙咖啡與胡椒味,之後,散發著一 股誘人香氣:白桃、法國黃梅、杏仁及榛果等氣息增添了嗅覺的層次體驗;入口滑膩,口感均衡豐富:帶有蘋果 餡餅般的酸甜可口味道,又夾雜著檸檬馬鞭草茶般的清新,餘韻綿延不絕,口齒留香,回味無窮。 此款優雅精緻的香檳非常適合搭配奶油香雞等菜式。

要釀造出如此非凡佳釀,BILLECART- SALMON Cuvée Nicolas François 嚴選兩款來自特級莊園出產的葡萄混合釀製 而成:Montagne de Reims 蘭斯山脈產區(60% Pinot Noir)與 Côte des Blancs 白丘產區(40% Chardonnay),部分釀造過程延續傳統技藝,於橡木桶中釀造,成就了這支佳釀香檳優質、高雅和豐富的質感。 BILLECART-SALMON 所產的香檳以細緻優雅的個性見長,均能完美搭配各種珍饈百味,無疑是世界級名廚及餐 廳的摯愛之選。米芝蓮一星餐廳 Alcyone 的行政總廚 Lionel Levy 更被 Cuvée Nicolas François 2006 深深吸引,讚嘆 其口感猶如「一場風味之旅的邀請函」,特別喜歡搭配風味較濃烈的菜式:香煎扇貝配榛子與牛肝菌,與香檳的 餘韻形成了完美平衡。

Created in 1964 as a tribute to the houses founder, the youngest release is the 2006 Millsime Brut Cuve Nicolas Franois, a blend of 60% Pinot Noir from premier and grand crus from the Montagne de Reims and the Grande Valle de la Marne and 40% Chardonnay from the Cte des Blancs. Almost entirely fermented in stainless steel (only 5% was vinified in oak barrels) and aged for 11 years on the lees, this is a beautifully ripe and rich yet pure Champagne withripe fruit flavors intermixed with chalky notes and brioche/nougat flavors. The palate is intense and concentrated in its rich fruit and substantial depth but also tight, highly elegant and perfectly balanced. The typical finesse of Billecart-Salmon is palatable as well as amazingly pure, with the persistent structure of a great Champagne. The 2006 already drinks dangerously well, but there is no need to hurry, this will go a long way.
